Sombrero Pie--'cause Y'all Asked So Nicely
You ask? I deliver!
Let me start by saying that I got this recipe out of Southern Living and it was originally entitled : "Beef and Onion Cornbread Pie". I thought that a little long, so we re-named it. We, now, only know it as:
Sombrero Pie
1 lb ground beef
1 lg onion, chopped
1/2 green pepper, chopped
1 can whole kernel corn, drained
1 can tomato soup
1 cup water
1 T chili powder
1 t salt
3/4 t black pepper
-Cook first three ingredients over medium-high heat. Stir in Corn and next 5 ingredients. Reduce heat and simmer 15 minutes. Pour beef mixture in a greased 2 qt. casserole. Spread cornbread topping over beef. Bake at 425 degrees for 18-20 minutes.
Cornbread topping: 3/4 cup cornmeal, 1 T. all purpose flour, 1 1/2 t baking powder, 1/2 t salt, 1 lg egg, 1/2 cup milk, 1 T vegetable oil.
--Stir together first 4 ingredients. Add egg, milk and oil.
We serve this with sour cream and shredded cheese. Serves 4-6. I have been known to double this recipe on occasion.

Yum, that sounds so good! And I've always had really great luck with Southern Living recipes in the past. Always winners here. Love that you guys renamed it, Sombero Pie is a MUCH better name!
