Menu Plan Monday!
I finally got mostly caught up from my weekend away! I am so pleased to announce that our JBQ (Junior Bible Quiz) team got 4th place in the 5 state region! We are so proud of our kids! They are awsome!
OK--here's the plan for this week!

Not very creative this week--mostly good ole standbys! I did get my Simple and Delicious magazine in the mail and hope to try out a few new recipe's next week! Hope you all have a great week. Go visit Laura for more menu plans!

The can of cream of whatever soup is a shortcut for making a white sauce. If you make some white sauce in the same amount, seasoned with onion and garlic, salt, and any vegetables you like, it will work and taste better and won't have the msg.

It is a 1:1:1 ratio, 1 tablespoon of fat (I use butter) to one tablespoon of flour, to 1 cup of liquid. I melt the butter over medium heat, and cook some diced onion and minced garlic in it, then stir in the flour and cook, stirring to make a paste and coat the flour with the fat. I cook that about five minutes for a white sauce, sometimes a little more. Then slowly pour in the liquid. I'd use half chicken broth and half cream (or milk, if you don't have cream). Cook that slowly, stirring, until it thickens. Season with salt and pepper.

Congratulations! Fourth is incredible too!Wow! They must be awesome!!!!!
This is the first year that our church is sending a team to regionals, which is in early May. We hope they make it to Nationals but they were 4th at Districts and just barely made it. They are a sweet bunch of humble girls with awesome attitudes. Districts flustered them because there were coaches actually yelling at their team members. (ugh, I can't imagine)

Great job on the Bible quiz!
The menu looks good....yum on that broccoli bake.
I have a recipe somewhere here for making a dry mix to substitute for using cream soups in recipes; you use a certain amount of the mix and then mix with water for a cream soup sub. Let me know if you want it.
I used to keep the dry stuff ready to go and I'm being bad again and slowly using can soup again!

Your menu looks great Jenna, and parmesan chicken sounds so good. I saw that broccoli recipe that Carrie posted and copied it off, it sounded really good. I didn't know that about msg in cream of x soup. We don't have a problem with msg, per se, but I do like to try to limit those kinds of things. I try not to cook with those canned soups too often. My sister Gail does have a recipe for the dry cream soup mix. I have it here if you need me to email it to you :)
