- Monday- Leftover Lasagna from life groups last night
- Tuesday-Crock pot chicken and veggies
- Wednesday-Deer (summer) sausage, cheese and crackers (and whatever is leftover in the fridge)
- Thursday- Spaghetti and meatballs, salad, garlic bread
- Friday-We'll eat at the football game.
- Saturday- Grilled chicken, baked potatoes, steamed broccoli, and German chocolate cake

- Monday-We had leftover Pioneer Woman's lasagna. This is absolutely delicious. We discovered that it is just as good if you use all ground beef and no sausage. I made two pans--one with sausage and one without. Sausage has MSG in it and hubby is allergic, so I made one just for him. We were split about half and half as to which one was the best.
- Tuesday- Homemade Chicken and Rice soup. This is a staple around here. We have it quite often.
- Wednesday- Fried chicken at church- that is always a treat.
- Thursday- Tacos
- Friday- Chicken and Broccoli casserole. This is one of my favorite meals--probably because of the curry in it. I will post this recipe at my food blog. If you haven't visited, drop on by. I'm only posting one new recipe a week.
- Saturday- TBQ (Teen Bible Quiz) kickoff swim party. We will be eating there. B and I are in charge of the quizzing team this year. Fun.

With B not able to eat solid foods yet, I am not overly enthusiastic about making up this week's menu. (If you're new around here, B is my husband who just had gum surgery--not my infant. Thankfully, I have not had one of those for a very long time.)
So, I am not really doing much.
- Monday--We're having scrambled eggs (maybe B will feel like eating those), sausage and biscuits
- Tuesday--Grilled Teriyaki Chicken--I didn't get to it last week because of B's surgery.
- Wednesday--Spaghetti at church
- Thursday--Orientation Night at school--They are having a cook out there.
- Friday--I'm thinking of making Pioneer Woman's Lasagna, salad, garlic bread
- Saturday--Leftovers
- Sunday--Probably out to eat.

- Monday--Ham and Cheese Egg scramble and biscuits. We are headed out to our church's last regular season softball game tonight.
- Tuesday-Baked Turkey Breast, mashed potatoes, lima beans, corn
- Wednesday--leftovers--not eating at church because I don't like what they are having. It is my turn to work at the meal ticket table though, so I have to be there anyway.

- Saturday-Chicken and rice soup, bread, apple pie (B. will be home late on this night-Yay-I want plenty of leftovers of this for Sunday after church. He will be tired and wanting home-cooking. This is his favorite of all I make.)

We had a great time in Memphis--the kids loved Graceland. The mall was wonderful--we only get to a big mall once or twice a year, so it was a treat. We spent too much. K. and I both got new swimsuits. We also enjoyed the time with grandparents-- and the food was great. B.'s dad grilled rib eye steaks for us. We had a blast at the zoo on Saturday--it was the best to be with my sister and her family. We haven't seen them since Thanksgiving. The place was packed, but it wasn't too hot. We even got to see some of those African elephants that my hubby is seeing out in the wild. B. called at 4 AM on Sunday morning--and I was never so thrilled to get a phone call. My heart was racing forever because of the wake-up call, but it was wonderful to hear his voice and to know all was well. No luck with the elephant yet. I have pictures from the weekend to share, but they are in my daughter's camera--and she is off babysitting today. Have a great week everyone.

What shall we eat this week? I have a bit of a plan--we'll just have to see how it goes.
- Monday-Today is my hubby's 39th birthday. I have been making the same meal for his birthday for the past 18 years. His mother made the same meal all the years before that. We will be having Ham Pie, green beans, applesauce, and key lime pie.
- Tuesday- Parmesan chicken, rice, lima beans
- Wednesday- Meatloaf at church
- Thursday-Scrambled eggs and Overnight Apple French Toast (new for us--will post recipe if we like it)
- Friday-Grilled marinated chicken, baked potatoes, broccoli
- Saturday-Fried venison tenderloin, corn casserole, garden salad, jello salad
- Sunday--probably Pizza Hut!

I just can't tell you how glad I am that last week is over. Our family is finally going to be able to slow down a little and recover from "Annie". My extended family was not able to come after all--which we were sad about--but understood. The play was just wonderful--I will post about it tomorrow-hopefully. For now, I need to get this week's meals planned. Here's what I've got for now.
- Monday- My mentor is making dinner for all her "mentee's" tonight--and then we are having a scavenger hunt--with my mentor,there is no telling what this will involve. This is our last meeting before our summer break. I don't know what I will be having (I know it will be good) and the rest of my family is eating left-over stuffed pasta shells, green beans, and corn.
- Tuesday-Chicken stir-fry over rice-- I enjoyed this so much last week that I planned for it again.
- Wednesday-Fried Chicken at church.
- Thursday-Hamburger casserole, green peas, green salad
- Friday-Burgers on the grill, corn on cob, french fries or maybe potato salad. (We didn't get to the burgers last week.)
- Saturday-leftovers
- Sunday-Out to eat and I'm making a German chocolate cake and something Mexican to take to Life groups.

The week of the big play, "Annie", has finally arrived. We will be meeting ourselves coming and going trying to get to rehearsals every night and get all our other obligations taken care of. Rehearsal will be from 530 until 1000, or later, Monday-Thursday. The play is Friday and Saturday night. I type all that to say that dinner will be quick and easy--to say the least.
- Monday- porkchop biscuits and eggs (porkchops were cooked yesterday)
- Tuesday- easy beef and bean burritos
- Wednesday- Spaghetti at church
- Thursday-Tyson chicken strips, Kraft Mac-n-Cheese, carrot sticks (also depends on when company arrives--if they are able to come!)
- Friday-Stuffed shells, salad, garlic bread, derby pie (company's a comin')
- Saturday-I want to grill burgers for lunch--we'll see what happens
Easy Beef and Bean burritos
1 can refried beans
1 package taco seasoning or 1 jar of salsa
1 to 1 1/2 lb of ground beef
Brown ground beef (add salt to taste) Add other ingredients and serve on tortilla shells.
We prefer the salsa instead of the taco seasoning.
I have never seen this recipe anywhere--I just made it up, as far as I know. My family really likes it and it's very quick.

- Friday-B. will be gone all weekend hunting turkeys in Texas--we are ordering Papa John's.

Wow, I just realized that I am only planning to cook on Monday and Tuesday--that's a pretty easy week for me! I may cook on Friday--we'll just wing that one!

- Saturday-birthday party for our sweet friend Hannah--who is going to be 16!!!
- Sunday--still deciding if we will eat at home and invite someone over, or if we will go out! We'll just see how this week goes--it will probably depend on whether I get this house cleaned or not!

So, it's Tuesday! I am a little late, but you know what they say-- it's better late than never. Here's the plan for our week. It will be quite, quite short.
- Monday--We had tacos last night! Very tasty.
- Tuesday--Cubed Steak, Mashed Potatoes, Green Beans--I wasn't able to follow my menu at all last week--life took over. I may not be able to make this tonight because of Drama practice. (updated to add that it is all on the stove as I type!)
- Wednesday--Fried Chicken at church
- Thursday--Take out--B. and the girls have Drama practice. We will all grab something out.
- Friday--We will be out of town.
- Saturday--We will still be out of town.
See, I started to not post this because, well, it's almost pointless. Anyway, that's the plan for this week. An unusual week for us!

I thought this week I would post breakfasts and lunches for a change. Honestly, it will be easy as I'm not that creative early in the day and we have the same stuff over and over and over...I know you can hardly wait, so here goes:
- Breakfast: Monday -Friday is cereal and juice,Pancakes on Saturday, Eggs and cinnamon toast on Sunday
- Lunch: Monday-Sandwiches, apples, milk. Tuesday- egg salad sandwiches, chips, carrots. Wednesday- left-over tacos. Thursday- Macaroni and cheese. Friday- leftover chicken and dumplin's. Saturday- who knows, whatever we find. Sunday-we almost always eat out, but have been invited to dine in the home of friends for Easter.
Now on to Supper plans:
- Monday- We will grill something, haven't decided what yet, roasted potatoes, broccoli
- Tuesday- tacos
- Wednesday- beef tips and gravy at church
- Thursday- Chicken and dumplin's (This is tentative because I may be driving to visit family that might be passing through 2 hours from my home. I truly hope that doesn't happen because I literally haven't seen them in 20 years. Hope that doesn't sound terrible, but it seems like it might be a bit awkward.)
- Friday- concert--going out for dinner/don't know where but I'm excited!
- Saturday-Cubed steak (simmered in tomato sauce and green peppers), mashed potatoes, and purple hull peas

I stand amazed at how fast the weeks fly by. Every week it seems like I had just posted this when it's time to do it again! This really has helped me be more organized and we are eating better! Thanks so much to the organizing junkie for hosting! Go on over and check out some other menus!
- Monday- We are having left-overs today because my frig is packed to the gills. It always seems to be on Mondays!
- Tuesday- I think I will fix ham and beans with cornbread today. I never fix this and I've got a "hankerin" for it! (That's a southern term, in case you were wondering. Hankering: to have a desire for, to want in a bad way. That's my definition, anyway!
- Wednesday- Fellowship meal at church--BBQ chicken this week.
- Thursday-Spaghetti with meat sauce, garlic bread, and some kind of vegetable--maybe corn.
- Friday-I must really be in a bean mood this week because I have Mexican soup planned. It's another one of those recipes that I really should share because it's so good and easy!
- Saturday-left-overs--yes, again
Think I'll just share that recipe now--even though spring/summer is probably not the best time to post a soup recipe. I promise that you will love it though.
Mexican Soup
1 lb ground beef (or up to 1 1/2 lbs.)
1 onion, chopped
1 can shoe peg corn
1 can yellow hominy
1 can pinto beans
1 can black beans
2 cans mild Ro-tel
1 jar (24 oz) mild Picante sauce
1 12oz can V-8
Brown meat and onion. Add the rest of the ingredients and simmer for 1 hr (or could put in the crock pot). Serve with Frito's, sour cream, and cheese.

- Tuesday-taco salad ( a warm-weather favorite around here) and chocolate cake
- Wednesday-fellowship meal at church--I think its hamburger steak and gravy--not my favorite, but I'm not cooking!
- Thursday-We will have the chicken and rice soup that I didn't get around to last week!
- Friday-Left-over day
- Saturday- I want to have company and grill hamburgers, make potato salad, and baked beans! ( I have a great, unusual recipe for baked beans that I will post below--scrumptious)

Amanda's Baked Beans
2 large cans Bush's Original Baked Beans
1/3 cup ketchup
1 teaspoon mustard
1/2 cup brown sugar
1 teaspoon Worcestershire sauce
1 regular sized can pineapple chunks, including some juice
1/2 teaspoon cinnamon
1/2 of an onion, chopped
1 package smoked sausage, sliced
Mix all ingredients together and bake at 425 degrees for 30-45 minutes until heated though!
These are delicious and the pineapple, cinnamon, and sausage make a wonderful flavor!
