• Monday- porkchop biscuits and eggs (porkchops were cooked yesterday)
• Tuesday- easy beef and bean burritos
• Wednesday- Spaghetti at church
• Thursday-Tyson chicken strips, Kraft Mac-n-Cheese, carrot sticks (also depends on when company arrives--if they are able to come!)
• Friday-Stuffed shells, salad, garlic bread, derby pie (company's a comin')
• Saturday-I want to grill burgers for lunch--we'll see what happens

Easy Beef and Bean burritos

1 can refried beans

1 package taco seasoning or 1 jar of salsa

1 to 1 1/2 lb of ground beef

Brown ground beef (add salt to taste) Add other ingredients and serve on tortilla shells.

We prefer the salsa instead of the taco seasoning.

I have never seen this recipe anywhere--I just made it up, as far as I know. My family really likes it and it's very quick.

We've had such a busy week this week--I don't even know where to begin. I'll just skim the highlights...

• I started out the week feeling very blue. I stayed home from my mentoring group on Monday evening because it was the only night B would be home in the evening for two solid weeks.
• Tuesday, I burned a CD of my mom singing for my dad. She passed away 20 years ago, and somehow, my dad had never gotten a copy of this. He's been waiting for me to do it since last summer.
• Several days were filled with errands. Lots of stuff to take care of with company coming, a banquet, and a play.
• Friday, we set up for the TBQ banquet--which took several hours. I also received a lovely poem from my sister (that she wrote)--it was so cute and funny and just made my day.
• Today, we had a parent work day for "Annie"--it did not take very long, and the kids ended up rehearsing for awhile. I finally went and bought all the flowers I want for my yard. I have plans of getting them all planted "tomorrow, tomorrow, I'll love ya, tomorrow." (Excuse me for that, but I have been listening to Annie songs for months and months.) Tonight was the night of the long-awaited TBQ Banquet. I did talk K into one picture. She looks just lovely!

They all had a grand time tonight--I'm so proud of all the kids involved, but especially my baby. She received the award tonight for TBQ High Scorer. She wasn't expecting that and was very happy to get it. We hate daddy was out of town, but we took lots of pictures so that he will get to see. Hope you all have a great weekend. • B just got on a plane headed for San Antonio to turkey hunt with some guys from work. He was excited to go. M. packed a bag at the last minute and asked him to please PLEASE let her go too. She tends to get pretty dramatic when Daddy goes somewhere--quite a few tears were falling as he pulled out of the driveway--with her exclaiming, "I can't believe he didn't change his mind." I happen to remember that my oldest did the exact same kind of thing when she was M's age.

• I got the sweetest poem in the mail today from my sister, Kim. She has quite the talent and this poem was dedicated to, and completely about me! It was rather funny--and I would share, but it's a little too revealing--concerning my name. Oh, I wish I could share... She wrote it 'cause she knew I had been a little blue! I had a lot of fun typing it out in Microsoft word with different colors, fonts, and sizes. If the girl would ever get email, I would send her a copy. Actually, I will anyway--with snail mail.

• It's noon here, and I have yet to make the bed, get in the shower, and get presentable for the day--not to mention my Bible study--which is supposed to be done before I get on the computer. B was here until 10, and that totally threw my schedule off--not that I minded, of course.

• We hung a canopy over M's bed this morning--it's hot pink--and was given to us by sweet friends. It really looks cute--and if B hadn't taken my camera with him on this trip, I'd take a picture for you!

• There has been a lot of Battleship playing around here this week. Not me--but the kids and sometimes B. They've had a lot of fun with it. M even took it to drama practice with her last night. I just get the warm fuzzies all over when I see my kids reading or playing games together.

• K is very excited about her Teen Bible Quiz banquet this weekend. She has a lovely formal dress and plans for me to straighten her hair--and then curl it again with a curling iron (Go figure). I know she will be just lovely. It will be interesting seeing all those kids (22 or so, of them) dressed in formal attire, with sunglasses, performing a rap they wrote about the book of Acts. We're having a lovely chicken cordon bleu dinner, as well. If I can talk her into it, I will post pictures of her in her dress--can't make any promises!

• Hope everyone has a great weekend. I have a pile of things to get done while B is away--I always have a project list when B is not here--so I may not be around much this weekend.

This email came from my cousin in Missouri. I was so excited that family wanted to come visit us and see the play that B and the girls are in. Add stress? Ha! I'm very happy they might be coming and hope it works out! ( If you're reading, I love you, A.) I have a whole week and a half to plan/prepare, so I don't think it will be too terribly stressful! Now, I'm off to go make my list of things to be done...

• Sunday-My hubby was supposed to fly during church and wasn't able to because of the weather. He walked in during praise and worship and surprised me! Loved that. We had a good lunch with our friends, T. and K.--and B. got hit with a little msg--it wasn't too bad though. Eating out can be very difficult for him!
• Monday-I stayed home the entire day. Got the laundry done and the bills paid.
• Tuesday-B's grandmother fell and broke her hip--she is doing very well. She just said she's not overly happy with the nurses!
• Wednesday-I did not feel well all day--tummy woes! I even left church early and left Coach J working all alone on a project we are doing together. I've felt bad about that the past couple days. Let me just say that it was good that I left! ;)
• Thursday- I enjoyed my Riverwalk walking with my friend. The weather was just perfect for it. My son and I had a nice evening at home while B and the girls were at drama practice. The play is coming up in a couple of weeks--they are in the musical, "Annie"! B is Oliver (Daddy) Warbucks. Thank goodness, he doesn't have to shave his head.
• Friday-We had a great family night--I just posted about it. We love to Farkle!
• Saturday-Today, we have a Teen Bible Quiz car wash in the morning and a 16th birthday bash in the afternoon/evening. They are having a digital scavenger hunt--which will be a hit, I'm sure! B and K went to the car wash and I am getting stuff done around here--you know, important stuff, like blogging! No, actually, I must get busy--Have a great weekend.

1. Where/How did you meet? We met the first day of our sophomore year in college. We were commuters that year and were hanging out with some other commuters on the third floor of the Student Union at Southeast Missouri State University.
2. How long have you known each other? In August, it will be 20 years.
3. How long after you met did you start dating? About 2 months. I was the one to ask him out, by the way!
4. How long did you date before you were engaged? 1 year
5. How long was your engagement? From October to July--that's 9 months.
6. How long have you been married? We will celebrate 18 years on July 1st.

9. What kind of cake did you serve? It was a pretty white cake with pink roses.
10. Where was your wedding? First General Baptist Church in Advance, Missouri. My uncle was pastor there and that is where I was attending at the time. My husband's father actually performed the ceremony. He is an Assembly of God minister.
11. What did you serve for your meal? We did not have a meal--just cake, nuts, mints, and punch.
12. How many people were in your wedding party? I had to look at pictures to see--I honestly didn't remember--5 Bridesmaids/Groomsmen, 1 candle lighter, a ring-bearer and a flower girl.
13. Are you still friends with them all? All the women were family except for one of them. I am in contact with everyone except I haven't seen or spoken with one of my cousins in 3 years and I haven't seen or spoken to the one that wasn't related to me in 10 years. The guys were mostly Air Force cadets--we are still in touch with 2 of them--but not very often.
14. Did your spouse cry during the ceremony? No.
15. Most special moment of your wedding day? B sang to me.
16. Any funny moments? Not really, I did tell my dad before hand that, "I don't want to do this." He said, "Oh, yes you do--come on." And B did have fun smearing cake in my face.

5. I was quite the singer/preacher when I was little.

8. But I went to Baptist churches a lot growing up.
9. I have never strayed from the Lord.
10. I have never had any alcohol, except one very tiny sip of champagne.
11. I have never smoked a cigarette or done any drugs and I don't have any tatoos or extra piercings.
12. I'm so thankful for that.
13. I never liked playing sports.
14. I was into drama and music.
15. I played the clarinet from 5th grade through 12th.
16. I was in two plays in high school. I played an elderly lady in one of them.
17. I love Coca-cola--diet is disgusting!
18. I love chocolate.
19. Pizza is one of my favorite things to eat.
20. There is always ice-cream in my freezer.
21. Please, do not make me eat beets, sauerkraut, greens, asparagus, or brussel sprouts--yuck.

41. It has been a wonderful experience and I would do it all over again.
42. We graduated from college in 1990 and 1991 (I was in '91).
43. I took off a year from school to help support us--we were terribly poor! ;)
44. After my husband's graduation, we moved with the Air Force to start pilot training. Well, he started pilot training and I tagged along and finished school in our new state.
45. It was very hard to leave home.
46. I'm so glad we did. (No offense to family!)
47. We thought we were rich! (We weren't.) We even bought a brand new car!
48. We found the best church and the best friends in our new city.
49. We found out I was pregnant in '91 right about the time B graduated from training.
50. We welcomed K into the world in June of '92.
51. Her daddy barely made it back from California in time.
52. I was a pre-term labor nightmare!
53. Being a mom is the best.
54. We moved to North Dakota when K was 6 weeks old.
55. It is very cold there and I do not like cold at all! Hot is tons better.
56. I loved our Bible study group at the air base in North Dakota.
57. Thankfully, we only stayed there for two winters, then we came back to the pilot training base.
58. I had a tough time getting pregnant the second time around.
59. I finally did and had a lovely baby girl in July of '95.
60. She was terribly sick and only lived 12 hours.
61. She looked a lot like her sisters.
62. We miss her still. She would be 12 this year.
63. I said I would never get pregnant again.
64. I was pregnant again very shortly thereafter and found out we were having twins.
65. It was one of the happiest days of my entire life--scariest too!
66. Telling my husband was the funnest thing!
67. The twins arrived in Sept 96. I had just turned 28!
68. My uterus was so large from carrying twins that it tore open and had to be surgically repaired. My doctor said that was the only time he had ever seen that happen. He also said it would be best to not have any more children and we didn't.
69. Wow, what a year that first one was! It's all still a bit hazy!
70. I thought I might lose it when the twins had RSV.
71. We moved to Washington state when the twins were 1 year old and K was 5.
72. I loved living in Spokane and made some of the greatest friends.
73. I miss all the fruit--Washington apples, peaches, cherries, and strawberries! Yum!
74. We moved back to the south in 2000.
75. We have been here ever since.
76. I do not want to go anywhere else.
77. I have home-schooled my children since 1997.
78. It has been one of the most rewarding things I have ever done.
79. We are not going to home school after this year. I need a break from all the rewards. ;)
80. I love to read classics and Christian fiction.

83. Then, I had twins and started home-schooling.

1. Look around!! Describe to me the very first handmade *gift* your eyes run by that was made for YOU from one of your children. Then, tell me why you have it displayed where you do.~~There are, literally, no hand made gifts anywhere around me. Not a one, if mine have made anything, it is put up somewhere. Mine never went to school where they made special things for parents. They did give me extra special valentine's this year. You can read them here.
2. Looking back on our childhood, we all can remember something we *always* wanted as a kid, but just never got. What is the one thing you can still remember to this day that you never had the *joy* of receiving? ~~ Carrie, this is hard. I'm trying...I, honestly, can't think of any particular thing I wanted. We sure didn't have much, but I don't remember a thing. I guess, as a young teenager, I wanted my parents to buy a VCR--they finally did though. I did always want to be a part of a particular crowd at school and that never happened--does that count?
3. What is one phobia that you have that others may find silly? I'm not talking fear of snakes. I mean *silly*, as in, others just don't get why on earth you're scared of *that*? ~Again, I can't think of anything silly that I am afraid of. I think most can kind of relate to the things I'm afraid of--I fear dying young like my mom did. I am sometimes afraid that somone might break in my house and hurt me or the kids. I fear someone walking into a public place and pulling out a gun and shooting me and/or people I love. You know--nothing particularly silly. Maybe, I'm afraid that someone might see me without my makeup or that I will become overweight!!
4. Name one saying that you made up out of the blue. Nobody in the general public would know what you meant by it but your family is all too aware of exactly what you mean when the words spout out.~ I'm not that creative to make up my own saying. I copy the sayings of others, though, like, " You snooze; you lose!" and "Treat your family like company!", and the one I'm most famous for, "You can get glad in the same pants you got mad in!"
5. You have the power to grant one miracle to someone outside of your own family. This miracle can not be frivolous. Who would you grant this miracle to. What would the miracle be? How would you go about granting it?~~ has to be some ONE. Hmmm...Carrie, you must have really had fun with these...All that I can think of at this moment is that I would like to see Annie's Izzy healed. If I were the one granting, it would happen in the blink of an eye! One second--she'd be completely restored!

1. I am so saddened by the shooting yesterday at Virg. Tech. It is all so senseless and I hate that there is no safe place to be. Part of why I continued to home-school was because of a fear of school shootings--I felt my kids would be safer at home. Now, college is even a safety issue. I guess we could homeschool for college! May the Lord be with all the affected families at Virg. Tech today.
2. I am also sad because of Heather's diagnosis. That sweet family has already been through so much. They are in my thoughts and prayers every day. She is doing such a wonderful job of keeping everyone updated. I hate that she has had some bad comments and had to turn on her moderation. Some people...
3. I am jumping up and down with joy that we have a two week study break from Junior Bible Quiz! We will begin studying again on April 30th to prepare for our National tournament the beginning of June. We will be heading to Wisconsin for that one.
4. Our trip to Gatlinburg is coming up soon and I haven't even planned our itinerary. We have been there several times and have done just about everything. We will definitely go biking in Cade's Cove and we will probably go to Dollywood this year. If anyone has any suggestions of things you have to do or places you have to eat while there, please let me know. We have really done most things there, but I am hoping someone will suggest something we haven't done.
5. Any ideas on what a 16 year old girl might like for her birthday. I have to go shopping in a day or two and don't have a clue what we will get her yet. My oldest may have some ideas, but I haven't asked her yet.
6. God has been so good to me this week. He has been a very real Presence for me and is teaching me everyday to rest in Him and to not get so stressed over everyday things. Don't sweat the small stuff, right?

I had the strangest dream last night. I dreamed I was walking home from somewhere. I was on a gravel road holding a stick and hitting at pebbles in the road with it. Then, all of the sudden, I was on a major highway outside of New Albany, Mississippi, and walking towards a gas station. I went inside to use the rest room and get a drink of water. While I was in the restroom, someone said, "If you want to see Amy Grant, you'd better hurry and get out here!" So, I hurried along and went out. Amy was standing behind the counter signing autographs for a huge line of kids. She was signing them all: "Amy and Mike" (Isn't she married to Vince Gill?) I was all trying to act nonchalant, like I really didn't care that I was in the same gas station as Amy Grant. I was studying the candy bars, the bubble gum, and glancing at her every so often. Anyhoo, she finished up the autographs and went into the restroom--which now had a beautiful lounge area. I followed her in pretending I needed to go and I struck up a conversation with her. We were sitting on the lovely couches while I was telling her how I loved her songs and how I used to sing "El Shaddai" at church all the time and how an elderly lady once told me she had heard me singing "El Shaddai" on the radio when it was really Amy Grant! This is when it really got a little bizarre---Amy said to me, "There are 29 gods, you know." I said, "Amy, you know better than that. I know you do." She said, "Everyone in Hollywood believes there are 29 gods. I guess I believe that now." I said, "But, Amy, surely you aren't denying your Lord and Savior." She just kind of shrugged and shook her head. I continued to counsel her and finally got her set straight. We exchanged addresses and phone numbers and she agreed to come to dinner at my house the next night. She and "Mike" had a place nearby. As I walked out of the restroom, Coach J and Mandalyn were out there waiting for me--(where did they come from?--I'm sure I was walking alone.) We started our 80 something mile trek for home--WALKING. And that's where my dream ended. Do you know how long it would take to walk 80 miles? And we're not the kind of girls to hitchhike! And I really hate that I had to miss having dinner at my own house with Amy Grant and "Mike" because I was still WALKING home! I am glad, however, that I did get her spiritual problems straightened out--that was most important! ( I, of course, have no idea the state of Amy's spiritual affairs--I'm guessin' she doesn't really believe there are 29 true gods.) Very strange--and I almost never remember my dreams. In other randomness, I found these yesterday: Dark chocolate covered Altoids! Wow, they are very good! Kind of like a peppermint patty-- You just might want to pick up a tin when you are PATIENTLY waiting in line at Wally World. I have only tried the chocolate covered peppermint flavor, but I am guessing that they are all good. You might want to give 'em a try!
